Carrot & Coriander Soup

Here is another soup that it is healthy, tasty, easy & economical to make.
Ingredients
- 1 tbsp vegetable oil
- 1 onion, chopped
- 1 tsp ground coriander
- 1 potato, chopped
- 450g carrots, peeled & chopped
- 1.2 l veg or chicken stock
- Handful coriander (about ½ a supermarket packet)
Method
Heat 1 tbsp oil in a large pan, add the chopped onion, then fry for 5 minutes until softened.
Stir in ground coriander and chopped potato, then cook for 1 minute.
Add the carrots and stock, bring to the boil, then reduce the heat.
Cover & cook for 20 minutes until the carrots are tender.
Tip into a food processor with a handful of coriander, then blitz until smooth.
Return to pan, taste, add salt if necessary, then reheat to serve.
A stick blender will do the job as well.
This quantity would give 4 good size servings.
You can always make changes depending on your taste – add ginger for a spicier soup, use orange zest and juice for carrot and orange soup, add coconut milk and lemon grass for a more exotic flavour.
